Prosciutto White Nectarine Salad

 

Dressing

¼ cup balsamic vinegar
¼ tsp oregano
½ tsp salt
½ tsp pepper
½ tsp garlic powder
1 tsp light brown sugar
¾ cup olive oil

In a jar with a screw top lid, shake together the balsamic vinegar, oregano, salt, pepper, garlic powder, and brown sugar, until combined.

Add in the olive oil and shake again.


Salad

1-2 White Nectarines or Flat White Nectarines, pitted and sliced
Arugula, rinsed and dried
6 slices of Prosciutto
Shaved Parmesan cheese

Cut prosciutto slices in half. Wrap each nectarine slice in a piece of prosciutto.

Arrange the wrapped nectarines on top of a bed of arugula.

Sprinkle with the shaved parmesan cheese.

Shake the dressing again to make sure it is well combined, then drizzle over the salad.
